We love pie around here, that's definitely not news to you if you read this blog as we've instituted fairly regular "Pie Day Fridays"! Last week I planned to make a batch of super-simple heart-shaped hand pies, however Fi decided to spirit away my heart-shaped cutter and I only just found it yesterday, so we ended up with round ones...still delicious!
Of course you can easily make your own pie fillings, but when you're doing some baking with a toddler cut yourself some slack and doctor up some of those store-bought versions. I confess I also used store-bought pie crusts (gasp!), even though I make a pretty good homemade version. I was going for quick, tasty results that would be heavy on the toddler hands-on steps and light on the prep. If you want to make these from scratch, just use your favorite pie crust recipe and make sure it is rolled out really thin (think 1/8th of an inch) and chilled well.
All I did was use a round cookie cutter and 2 rounds of pie crust (raw of course) to cut out the circles that would become our pies. I added the zest of 1 lemon to a can of prepared strawberry pie filling (cherry would be good too!) and dolloped about 1 tbsp. per round then stretched the second circle over the top and sealed by gently pressing all the way around with a fork. Place the little pies on a silicone-lined baking sheet, or use stone baking sheets to avoid sticking, and brush each with a little beaten egg before cutting small vents in the top.
Bake at 400 degrees for 10-12 minutes until browned and bubbling. The printable version of this uber-simple recipe is below, so check it out!
